Mexican Menu Mainstays

Mexican menus are big news, whether breakfast, lunch or dinner the authentic tastes of fresh chilli, lime, and avocado is Qué padre with cafes, restaurants, food trucks and even pubs up and down the country.  What’s driving the surge in popularity?  We think it’s the fresh ingredients, the flexibility of each dish to be spicier (or not), the ease of creating a vegetarian or meat option and the adaptability to fit into any daypart!  Breakfast Burrito or Huevos rancheros, tacos, tortillas, Pozole, Sopes the list of dishes is endless.

The Basics

Start with the basics, guacamole (we have a new product coming soon), whole black turtle beans, tomatillos, red salsa, jalapenos… use our website to order up all the key ingredients. Our Achiote paste comes Mexico and is made from Annatto seeds. Achiote has a beautiful reddish yellow colour with a mild, earthy, peppery flavour, perfect for meats, sauces and stews.

Appetisers or snacks

Most Mexican menus will have taquitos and empanadas available, with various fillings including meat or plant based, these appetisers are also great as daytime snacks or as a sharing plate with friends and they are a traditional dish for most Mexicans. Our Chicken Fajita Taquitos use flour tortillas to wrap a filling of chicken, white onion, and mixed bell peppers, all seasoned with aromatic and lightly spiced fajita seasoning; and our Jalapeno Cheese Taquito is not for the faint hearted – a rich, creamy cheese mixture, spiced and dotted with jalapeños earns this product our top heat rating.  Enjoy two as an appetizer, one as a snack on the go, or share several with friends. How do you do chilli?

A mainstay of Mexican dishes, jalapeño, serrano, poblano, chipotle, and habanero to name a few, are used to add degrees of ‘heat’ to recipes and we’re now seeing these ingredients used in other dishes to add a flavour of Mexico. Add chilli to mayo or ketchup to spice up dishes, and if you use habanero, be sure to add a warning!

Wholesome and healthy food

There’s a big buzz around whole food at the moment, using the most natural ingredients to create meals, and Mexican food is the essence of this. Corn, beans, coriander, tomatillos, rice, nopalitos or cactus and avocado offer incredible variety and taste to dishes.
